Wash the baby potatoes and dry them well
Leave them whole or cut larger ones in half
Toss the potatoes with olive oil, salt, and pepper
Add garlic, rosemary, thyme, or paprika if desired
Spread them in a single layer on a baking sheet
Roast for 25 to 35 minutes, turning once halfway through
Cook until golden brown and tender when pierced with a fork
Serve immediately
