Preheat the oven to 425°F (220°C)
Wash and scrub the sweet potatoes
Peel if desired
Cut into cubes, wedges, or leave whole
Pat dry with a towel
Toss with oil
Add salt and any desired seasonings
Spread in a single layer on a baking sheet
Roast for 25 to 45 minutes, depending on size
Flip halfway through for even browning
Roast until tender and caramelized
Remove from the oven and serve
