Rinse 1 cup long-grain white rice until the water runs clear
Bring 2 cups water to a boil in a saucepan
Add the rice and 1 bay leaf
Reduce heat to low, cover, and simmer for 15 to 18 minutes
Remove from heat and let sit covered for 5 minutes
Fluff the rice with a fork
Stir in 1 tablespoon lime juice
Stir in 1 tablespoon chopped fresh cilantro
Add salt to taste
