Stop watering the potatoes 1 to 2 weeks before harvest
Wait until the plants yellow and die back
Use a garden fork or spade to loosen the soil
Start digging several inches away from the plant
Lift the plant gently to avoid cutting tubers
Collect the potatoes from the soil by hand
Separate damaged potatoes from healthy ones
Brush off excess soil without washing
Cure the potatoes in a dark, cool, well-ventilated place
Store the cured potatoes in a cool, dark, dry location
