Place eggs in a single layer in a saucepan.
Cover with cold water by about 1 inch.
Bring water to a gentle boil over medium-high heat.
Once boiling, reduce to a steady simmer and cook 9–12 minutes.
For soft yolks: 9–10 minutes.
For firm yolks: 11–12 minutes.
Remove pan from heat.
Drain hot water.
Immediately place eggs in an ice bath for 5–10 minutes.
Peel under cool running water.
Slice lengthwise and remove yolks for deviled eggs.
