How to Make Crunchy French Fries?

Choose starchy potatoes like Russet

Peel the potatoes if desired

Cut into even fry-shaped sticks

Rinse the cut potatoes in cold water

Soak the potatoes in cold water for 30 minutes to 2 hours

Drain and dry the potatoes thoroughly

Heat oil to 325°F to 350°F

Fry the potatoes in small batches until soft and pale

Remove and drain the fries

Let the fries cool for 10 to 20 minutes

Increase the oil temperature to 375°F

Fry the potatoes again until golden and crisp

Remove and drain on paper towels or a rack

Salt immediately after frying

Serve hot
