Preheat the oven to 425°F (220°C)
Peel or scrub sweet potatoes
Cut sweet potatoes into bite-sized chunks
Pat the pieces dry
Toss with olive oil
Add salt
Add black pepper
Add optional garlic powder, paprika, or rosemary
Spread in a single layer on a baking sheet
Roast for 20 to 30 minutes
Flip halfway through
Roast until browned and tender
Serve hot
