Pat the potatoes dry with a clean towel
Heat a skillet over medium heat
Add oil or butter to the skillet
Add the potatoes in a single layer
Sprinkle with salt and pepper
Cook without stirring until the bottom is golden brown
Flip or stir the potatoes
Continue cooking until all sides are browned and the potatoes are tender
Add onions or seasonings if desired
Serve hot
