Peel potatoes if desired
Rinse the potatoes
Shred the potatoes using a box grater or food processor
Place the shredded potatoes in cold water
Drain the potatoes
Squeeze out as much moisture as possible using a clean towel or cheesecloth
Season with salt and pepper if desired
Heat oil or butter in a skillet over medium heat
Add the shredded potatoes in a thin layer
Press them down lightly with a spatula
Cook until the bottom is golden brown
Flip and cook the other side until golden brown
Remove from the skillet
Serve hot
