Wash and scrub potatoes
Cut each potato in half lengthwise
Cut each half into wedges
Soak wedges in cold water for 20 to 30 minutes
Drain and pat wedges dry
Toss wedges with oil, salt, and desired seasonings
Preheat oven to 425°F to 450°F
Arrange wedges in a single layer on a baking sheet
Bake for 25 to 35 minutes, flipping halfway through
Bake until golden and crisp
Serve hot
