Rinse 1 cup of rice until the water runs mostly clear
Add the rice to a pot with 8 to 10 cups of water or broth
Bring to a boil over medium-high heat
Reduce the heat to low
Simmer uncovered or partially covered, stirring occasionally
Cook for 45 to 90 minutes until the rice breaks down and the mixture becomes thick and creamy
Add more water as needed if it gets too thick
Season with salt to taste
Serve hot with toppings such as scallions, ginger, soy sauce, sesame oil, egg, or meat
