Wipe off dirt with a dry paper towel or soft brush
Trim off any tough stem ends if needed
Rinse quickly under cold running water only if necessary
Do not soak the mushrooms
Pat them completely dry with paper towels
Remove the gills if a recipe calls for it
Clean them just before cooking
