Clean the chanterelles gently with a brush or damp cloth
Trim off any tough or dirty stem ends
Slice larger mushrooms if needed
Heat a skillet over medium heat
Add a little butter or oil
Add the chanterelles in a single layer
Cook until they release their moisture
Stir occasionally and let the liquid evaporate
Add salt near the end of cooking
Cook until the mushrooms are golden and tender
Add garlic, shallots, or herbs if desired
Finish with black pepper, lemon juice, or cream if desired
Serve immediately
