Trim any tough stem ends and tear the maitake into bite-sized pieces
Gently brush off dirt or wipe with a damp paper towel
Heat a skillet over medium-high heat
Add oil or butter
Add the maitake in a single layer
Cook without stirring for 2 to 3 minutes
Flip or stir and cook for another 2 to 4 minutes
Season with salt and pepper
Add garlic, herbs, or soy sauce if desired
Cook until browned and tender
Serve immediately
Roast at 425°F for 15 to 20 minutes if preferred
Toss with oil and seasonings before roasting
Add maitake to soups, stir-fries, pasta, or rice dishes
Avoid soaking in water before cooking
